I’m not sure whether I helped or hindered my weight-loss progress by biking 3.1 miles to Costco, eating as many samples as I could get my hands on, and then biking back… I’ll say helped, but by a small margin. The good news is, I’m dying and I feel like my legs are going to fall off 🚴
My cooking adventures are getting healthier!
In the last 5 days, I’ve made:
Garlic Teriyaki Edamame
Grilled Artichoke & Pesto Zucchini Rolls
Grilled Onion & Turkey Sausage Omelette
Balsamic Marinated Chicken with Brown Sugar Acorn Squash
Sautéed Corn, Bacon, & Scallions
and for lunch today I made a delicious Pesto Chicken Wrap

Hi! I’m back. And I’m motivated. All you guys running the Chicago marathon yesterday have inspired me so much to get back into working out more (AND I still need to see a specialist for my knees so I can continue running at some point). I thought I might peak at 4 marathons… but I’ll do anything in my power to make sure that’s not the case :)
2.75 miles biking to Lifetime
30 minutes on the AMT
Short lifting routine: (repeat 3 times)
Lat pulldown- 60 lbs, 10 reps
Shoulder press- 10 lbs, 10 reps
Lateral raises- 10 lbs, 10 reps
Bicep curls, 20 lb curl bar, 10 reps
1.55 miles biking home
And for a healthy dinner after my workout I made a balsamic chicken marinade (Craig grilled the chicken of course), and brown sugar acorn squash. I have 7-1/2 weeks to fit into a bridesmaid dress that’s currently too tight so I have NO excuses not to workout and eat healthy every day!!
I’ve been craving an omelette lately and this one didn’t disappoint! 1 egg + egg substitute, salt & pepper, sautéed onions, tomato, leftover mini meatballs (chopped), and mozzarella cheese with salsa on the side. Yum 😄 and now I’m off to ride my bike to Lifetime and get a good workout in!
My latest cooking adventures! Fancy breakfast sandwich, soft pretzels (yay KitchenAid mixer!) with homemade cheese sauce, breaded cheese and zucchini sticks, mushroom and onion tartlets, BBQ bacon blue cheese sliders (again- but I grilled them this time! My first time grilling!), curry chicken salad, and chicken cordon blue pasta. Not pictured: Crock Pot peach cobbler, stuffed zucchini boats wrapped in bacon, and last but not least- healthy chicken and avocado enchiladas. Addicted to cooking? Absolutely.
I call this the “everything” frittata. As in, I took 12 eggs, spices, and everything I had in my kitchen and threw it all in the Crock Pot. Including, but not limited to, ham, red peppers, green onion, spinach, sweet onion, and cheese. Now I just have to wait 2 hours for it to be ready 😁 But YUM!!
